Recipe: Power Balls

These almond butter power balls are a fan favorite. Packed to the brim with fiber, healthy fats, and various vitamins and minerals, it's a miracle that they taste so delicious. Perfect on-the-go snack for road trips or long days in the classroom or office. Best of all? The recipe and ingredients are easily tailored to your tastebuds – dates and a binder (almond butter in this case) are the main ingredients. From there, though, the sky's the limit!

1 cup Medjool dates, pitted
1/2 cup rolled oats
1/4 cup dark chocolate chips
3 TBSP almond butter
1 TBSP flaxseed meal
Optional additions: chia seeds, coconut flakes, sea salt

Food processor

1. Combine all ingredients, except chocolate chips, in a food processor until they form a consistent mixture
2. Fold in chocolate chips, or throw them in the food processor once the rest of the ingredients are combined and process for a few seconds – giving you chocolate flavor throughout with some chocolate chunks mixed in
3. Using your hands, roll mixture in golf-ball sized balls
4. Let stand in fridge for 15–20 before consuming
5. Enjoy within 2–3 days or freeze for later use
