Recipe: Crockpot Beef Chili

You might've seen my recipe for crockpot beef stew a while back. This is simply a spin off of that, but I'm calling it "chili" this time around because of the abundance of beans. The lesson here is: you can basically throw any combination of veggies, meat, and liquid into a crockpot for the day and it will come out tasting like magic.

1 lb. beef stew chunks (local + organic if you can)
6–8 baby red potatoes
1 can diced tomatoes
1 can kidney beans
1 can black beans
1 can tomato sauce
1 carton beef bone broth (or ~2 cups homemade)
1 bell pepper
1/2 yellow onion
Spices: ginger, chili powder, cumin, salt, pepper
Optional toppings: shredded cheddar cheese, cilantro

1. Chop onion and bell pepper into one-inch pieces + quarter the baby potatoes
2. Open cans: diced tomatoes, kidney beans, black beans, tomato sauce, beef broth
3. Dump veggies, canned goods, and beef into crock pot
4. Add a sprinkling of the spices you choose (I used 1/2 tsp each to start)
5. Mix it all up
6. Cook on low for 6–8 hours
7. Serve topped with shredded cheese or cilantro if you'd like
